Potato Rosti
I needed to use a bunch of potatoes, so decided a big cast iron pan cooked hash brown or potato rosti would be the go.

Except that I oven baked it.
I added some gruyere & cheddar, some pancetta and some oregano.
It was super yummy, although a bit on the fatty side. Everything crisped up super nicely though.
G really loved it.
