Pork Tenderloin and Halloumi Salad
A simple meal of pork tenerloin with a salad.
The pork I did something along the lines of:

but probably had it in the oven about 1 minute too long. A touch pink in parts, but not quite as pink as I’d prefer my tenderloin.
I’d seasoned it with a pre-made Argentinian herb & spice rub.
I paired it with a halloumi salad, dressed with dijon, tahini, balsamic, lime juice & olive oil.
G thought the pork was spicy, which was very surprising given mine didn’t seem to be. He loves halloumi though.
L likes pork, so was pretty happy I think.
