I saw Kenji’s suprising Spanish tortilla recipe the other day:

and decided to make it.

I made my own mayonnaise though, cause it is too easy with a stick blender (and threw in a bit of paprika, because I like the smokiness for this sort of thing).

Neither L nor G noticed that it was made with chips :)

Everyone thought it was yummy.

Served with a sherry vinegar & mozzarella salad.
