A beef ragu, something along the lines of:

but without the can of tomatoes or tomato sauce (yikes!).

I made it with celery, carrot & leek. Plus some shredded spinach.

The pasta were huge Conchiglie- truly super sized.

G loved it. “That was delicious, can I have more?” He’s totally about the carbs.

I served it with some pepper and pecorino grated over.
