Tomato Soup

I made a fairly simple tomato soup tonight.

Lightly fried an onion and some garlic in some olive oil until fairly translucent, added 1 and a half carrots roughly chopped, some left over chicken stock / juices from roasting a chook, a heap of vine ripened tomatoes, some turmeric, vegetable stock, and then let it bubble away for 30 minutes.

I then blended it all with a stick blender, added some thyme, a bit of cornflour slurry to thicken it slightly and then served it with some black pepper and some of L’s sourdough lightly toasted & buttered.

Pretty yummy & very much L’s thing, G liked it, but particularly likes getting bread soldiers with soup, so it is sometimes hard to tell. I ate heaps of it.
