Ancho Chile Chicken Tacos

I made chicken tacos tonight, largely following the ancho chicken recipe from here:

I used a pasilla chile and some ancho chile powder, trying to contain the heat for G. In the end I wished I’d used more chiles, as it didn’t really have any kick to it, but did have a nice fruitiness from the ancho & chiles. Next time I’d use more, good to know.

ie I put the ancho chicken on the table, put out some tortillas with some salad, avocado & tomato & coriander.

It had a lovely flavour. I’m not normally a super fan of shredded chicken, but this worked well.

G was in a tired mood and only ate a sinlge taco (suprising from him, but we’d had a late lunch), but L & I devoured everything anyway.

I have a small amount of the ancho chicken liquid leftover that I need to find a meal to use in.
