Leek and Potato Soup
I made a simple leek and potato soup tonight. I was reading last night about traditional British fare for Christmas and one of the things on a list was Leek & Potato Soup, so I thought I’d give it a go. Not my first time, but a good idea none-the-less for Christmas week. I suspect that the French wouldn’t think a Vichyssoise is entirely British, but that’s Europe for you.

Except that I didn’t use any cream, and I added a healthy chunk of finely chopped chives at the end.
I served it with some buttered toast soldiers.
Everyone was super happy with it I think. Healthy, simple and delicious.
