Pole Mole

I made a pork mole tonight. It was yummy.

I pretty much just tried to follow this recipe:

A few minor differences, but nothing all that significant.

I was a bit torn between serving it on tortillas or rice, but went with tortillas in the end. (I’d asked L who said G would prefer tortillas, so there we go.)

I served it with a basic guacamole and a pico de gallo.

Everyone was pretty happy.

I now have a heap of shredded pork mole to use in leftovers for a few days. G just thinks we should do the same again.
