Lap Cheong Rice

Simple Instant Pot Lap Cheong rice as I’ve done a few times.

Something like:

Lap cheong & shallots in the IP on saute for 2 minutes.

Add some shaoxing rice wine, deglaze. Add fried onions, oyster sauce, soy sauce, XO sauce, touch of sesame oil, chopped spinach, vegeta (vege stock / salt), garlic powder, 2 cups rice, 2 cups water. Give a good stir. Set IP to auto-rice mode. I used to be able to do this on high pressure, but it is failing on me now and works fine on low pressure, so I’ve just committed..

Tossed on a heap more fried onions and green onions and stirred through after it was cooked while fluffing the rice.

Everyone loves it, and we’ve now got a heap of left overs, so I might take tomorrow off.
