Chicken Larb

I made chicken larb for dinner, quite similar to:

I even hand cut some chicken thighs as it suggested.

As per a different recipe I toasted some peanuts, blitzed them, and added it to the larb, instead of the toasted rice of this recipe.

I didn’t add the sugar (just because).

A bit different to the pork larb I made the other week, but still quite tasty. A bit more of a kick to it than G liked, but he was a trooper.

L & I both really liked it.
