Steak with Chimichurri and a Halloumi Chickpea Salad
I’d picked up some nice large steaks the other that I cooked tonight after making a chimichurri during the day.
I basically followed this recipe:

but used sherry vinegar.
It would have been better with fresh oregano as I’ve mostly done it in the past.
Still, it’s a great combo. The steaks I basically let come up to temperature, lightly seasoned them, cooked them for a bit under 2 mins each side in a pan, let them rest, served with the chimichurri and ate them. Yummy.
G actually was pretty happy with a bit of steak too, sometimes he has a funny reaction to meat, but this was pretty tender and tasty imo.
I also made a chickpea & halloumi salad to serve with it.

I didn’t use Asda ingredients as such, and screw low-fat for halloumi, but it was super tasty. G ate heaps, particularly of the salad, and L was really happy with the whole meal I think.
