Sausage, Pancetta and Fennel Orecchiette

I fairly faithfully made this recipe for dinner:

With orecchiette in place of the fusilli.

I don’t cook much with tarragon or fennel, so I was glad to use them.

I splashed a bit of cider vinegar in when it called for wine, and supplemented the stock as a result.

All in all, I think it was very tasty and everyone was happy with it.
