Carnitas Enchiladas
While it wasn’t my intention to keep making meals of pork this week, I had a fair amount of carnitas left over from the other day that I needed to use.
It occurred to me that enchiladas would probably be a good choice, and I quickly found this recipe:

I followed the recipe pretty closely, except that I added black beans to the filling. In the end there was quite a bit of the sauce, and I was worried it would be too liquid, and perhaps a bit thin. While cooking it was bubbling up to basically the level of the cheese (so looked too much), but it was a great amount in the end once it had sat for the final 10 minutes.
I had probably overcrowded my pyrex dish (super similar to the photos on the recipe), which made separating them harder that I guessed.
I served it topped with a quick pico de gallo (very similar to the one linked in the recipe, but just throwing it together myself), and a simple side salad & some slices of avocado.
Everyone was very happy with it I think, definitely right up G’s alley.
In hindsight I probably should have hidden some chopped spinach in with the carnitas, but G is good about eating his salad, so no big deal.
