Chicken Korma

I made chicken korma for dinner. Something along the lines of this recipe:

I used chicken thighs too (I mean, flavour), but departed a bit in the sauce. I don’t (as a basic rule) use milk or cream or yoghurt when I cook, so used one tin of tomatoes and a small tin of coconut cream. I also added a cup of chopped spinach, some carrots & a small capsicum to up the vege content.

I made some basmati rice to go with it and topped it with coriander. I did the basmati as 1 cup rice to 1 cup water, after rinsing, in the Instant Pot, high pressure, 6 mins, natural pressure release - quick and easy.

G really liked it, which is great. L & I were pretty happy too. I ate a huge amount :/ Because of the ordering of my ingredients in the blender why almonds weren’t smooth, but it added a nice texture I though.
