Pork Carnitas
I made pork carnitas tonight, basically following:

A bit of a difference to how I’ve made them in the past, and pretty easy really. I normally have made Cuban style carnitas, with citrus, and then finished in the broiler.
This finishing pan frying them sounded a bit weird, but worked out super well and easy.
I served it with some tortillas (lettuce cups for me, tortillas for G), my take on a pico de gallo, some sauerkraut (gotta get through it all) and gherkins (ditto).
It was yummy, I think everyone liked it.
Last night of pork for a while I think after 5 nights in a row of it :)
