Frittata
A simple Frittata. The only real change from many I’ve made in the past was that I tried using some baking powder (1 tsp) to make it a little lighter. It worked well, quite fluffy.
I had leftover mince from last night’s tacos, but not much, so I fried up some diced pancetta too. Setting aside to cool, I cooked up some onions, garlic, spinach, parsley & capsicum. Added a little salt, cumin. I then whisked up 9 (!) eggs, added some finely grated tasty cheese, whisked in the baking powder, folded in the vegetables, layered in the two meats (one to each half of the frittata). I put it on the stove for a few minutes, whisking a bit at first, then popped it in the oven at 180c for probably 25 minutes.
It was definitely a lot higher / thicked, and took longer to cook as a result, but was beautiful to look at and tasted a little lighter. I was quite satisfied with it, and L & G ate it up.
Busy afternoon tomorrow, so need something easy, maybe even just frittata leftovers or something else simple.
