Stracciatella Alla Romana
I made Stracciatella for dinner tonight, a family favourite.
Something along the lines of:

but I also added chopped spinach & Orzo, while using a mix of pecorino and parmigiano-reggiano, and omitted the lemon.
I wasn’t following a recipe, this is something we’ve done many times, and L & I really enjoy. This was the soup last week when I made the avgolemono soup that G compared it to and found wanting. A classic filling soup with lots of flavour once you get the balance down for your quantities of stock, cheese & eggs.
I’ll probably make this for the rest of my life. Simple, hearty, nutritious, yummy.
