Last nights pork left me with a fair bit of left over white rice and a little left over pork.

I didn’t really follow a recipe, but roughly something like:

But, no frozen peas or corn, the carrots weren’t frozen, I added some capsicum, some oyster sauce, chopped spinach and the small amount of leftover pork along with the mince. Throw in the left over rice.

All pretty quick and easy. I love egg in fried rice done like this (so you get decent chunks of it, you don’t want to coat the rice with egg, although not that I’d mind as I love egg).

All three of us were pretty happy I think. Pretty substantial meal and quite a lot left over, so I guess lunches or maybe even a dinner, will have to see how it goes.
