Smoked Salmon Capers Salad
I had some smoked salmon, capers and salad and wanted to make something.
I made something sort of inspired by this:

I had some spring onions I also needed to use, so I whacked them, some chives, some balsamic & olive oil in a pan, slightly reduced it and cooked down the onions a little, hopefully infusing the oil & balsamic, then let it cool.
I plated up the salmon, drained and dried a tablespoon of capers, put them on the salmon, added some pepper, salt and lemon juice.
Tossed the salad leaves with the balsamic/oil/onion after it had cooled, with a few halved tiny tomatoes.
L & I liked it. Nice salmon. G is always suspicious of fish, so I also supplemented his with some left over chicken tikka masala & rice, which he ate a heap of. Still he did have some salmon & salad, so that’s good. He ended up eating a lot- I guess growing boys need calories to grow.
