Chicken Thighs Salad
A family favourite, which is fast, easy and yummy.
Boneless Chicken thighs, 200C for 20 minutes in the oven. A typical preparation would be tossing them in some salt, pepper, olive oil, balsamic vinegar, and some spices (depending on my mood). Let it rest for 5 minutes.
Throw some leaves & halve some small tomatoes in to a salad bowl. Cut up the thighs, put them on the salad. Depending on my preparation I will then tip some of or all of the juices from cooking the chicken over the salad and toss (or otherwise season the salad - balsamic, olive oil, salt).
L actually made this tonight, but this is my log of what we eat, so I can keep track of when I made something, when I should bring something back in to the rotation etc (and anyway, I make this all the frickin time).
