I cooked some brisket in the Instant Pot today, roughly following the above recipe, except for the BBQ sauce. I was looking at random recipes and saw someone talking about brisket tacos, and that sounded good, particularly seeing I have some jalapenos and left over tomato salsa I need to use up.

I bought some flour tortillas (G loves them), got out the salsa and some salad leaves and away we went.

I liked the flavour on the brisket - mine didn’t really have the fat layer like in the picture, but it still came out quite moist and nice. It pulled in to the typical brisket “strings”, and had a good beefy flavour (the overnight dry rub really was a good investment I think). I’ve learnt to not rush the de-pressuring on the Instant Pot for meat, so I just let it naturally release, or I suspect the meat would have been tougher.

G was mostly happy that he got tortillas, but he did happily eat it all, and L seemed to like it. I will keep buying brisket as the weather gets colder I think.
