Roasted Tomato Salsa
I made some roasted veg salsa a week or so ago and thought it was a little watery. Yesterday I made some (with an eye on dinner tonight), but I guess the tomatoes were different, or I roasted them longer, but after blitzing it in the thermomix it was a much better texture than last week.
Still, I’d since bought some Xanthan gum (omg, I have read this word for years and heard people talk about it, and have ALWAYS heard / read Xantham with an m - L too was similarly shocked when I told her!!!). I’d thought about using some for years, but never made the purchase, but finally bit the bullet. This led me to rethinking salsa, so here I am.
I put a very tiny amount in the thermomix and gave it a final blitz. The consistency was nice. The flavour was great.
I basically followed the attached recipe, with a little more onion, some rosemary instead of thyme (it is what I had), almost no sugar (2 tablespoons of brown sugar, wtf? that’s a huge amount in to already very sweet roasted veges).
G is funny - he loves capsicum and tomatoes, but would always prefer them uncooked. He said the salsa tasted like the veges were cooked (which is fair enough, because they were).
L seemed to like it.
We had it with simple corn tortilla chips as an entree to a dinner of lamb kebab’s and a simple salad.
G was having a tantrum through most of dinner (I think he was just really tired, he’s had a big week), but I think he was basically happy with the kebab and salad.
I will probably bore the family with Xathan things for a few weeks, as it is interesting to have a new tool to play with. Guess we’ll see. Lots of the top suggestions are desserts, which aren’t particularly my thing.
