Beef Nachos

A simple beef nachos.

No Old El Paso anything, my own spice mix (ie Cumin, Vegeta, probably other things) for the beef, shredded Cheddar with a bit of shredded Mozzarella instead of Monterey Jack. Otherwise pretty similar.

I also made some Guacamole (smashed avo, lime, tomato, salt), and a roasted veg salsa (roasted some onions, garlic, tomato, capsicum for 30 mins, then broiled them for 5 mins, then into the Thermomix with some lime juice, cumin, salt and fresh coriander for a quick blitz).

but I wanted to intensify the flavours, hence the extra roast (G does not like a super sharp garlic flavour, which I had last time I followed this recipe by the book, so I was going for a mellower profile). Turned out quite intense flavour- very nice.

All in all, it went well. L & G love avocado & hence guacamole, G is not so sure about salsa (even though he loves tomatoes) but ate some anyway. We put jalapenos on half the nachos, which were pretty hot, but L & I are happy to have our food a bit spicy.
