Spinach Parmesan Chicken Noodle Soup

Classic chicken noodle soup. Lots of changes. Used shredded kale & spinach. Used 6 chicken thighs. For the noodles I used Manischewitz Fine Egg Noodles (a German, Polish, Ashkenazi style twist on the idea afaik). Otherwise pretty similar, or totally different depending on how you like it, but still a chicken noodle soup.
The basic make broth, boil chicken, shred chicken, add chicken & noodles is pretty typical, but the lemon zest & parmesan rinds (which I have a few of because I’m making a lot of pesto at the moment) is a nice and tasty twist.
