So I had a heap of left over chermoula from last night’s roast chook.
I watched a cooking show a week ago in the background as I worked called Selena & Chef, where Selena Gomez, supposed newby cook, learns a dish or two each episode from a chef.
I’d picked up some nice large steaks the other that I cooked tonight after making a chimichurri during the day.
I wasn’t feeling great this afternoon, so wasn’t up to putting some effort in to dinner properly.
I made a lamby larb salad for dinner tonight. We don’t order much Thai here (in general it is much better back home), but I wanted to try something a bit different and something lamby, and I’d picked up some lamb mince.
I had some beef meatballs that I’d picked up on special, so I wanted to use them.
I made soup for dinner tonight. G has a cooked lunch provided at school.

Super simple crumbed pollock, seasoned and in the oven. At the end I quickly cooked some broccoli, carrot, sugar snap peas & beans in a pot of salted water.
While it wasn’t my intention to keep making meals of pork this week, I had a fair amount of carnitas left over from the other day that I needed to use.
