I made a fairly simple tomato soup tonight. Lightly fried an onion and some garlic in some olive oil until fairly translucent, added 1 and a half carrots roughly chopped, some left over chicken stock / juices from roasting a chook, a heap of vine ripened tomatoes, some turmeric, vegetable stock, and then let it bubble away for 30 minutes.
Super simple dinner tonight. Some pork & caramelised onion sausages and some “chorizo” style (not really!
I made a simple roast chook for dinner tonight. We served it with the leftover paella.
